The Story Behind Entwine — From a Frustrating Dinner to a Live Platform

Every product has an origin story. Ours starts with a sommelier, three unavailable bottles, and a very good dinner nearly spoiled.

Entwine didn't start in a boardroom. It started at a table — with a frustration that wine and food technology had somehow never been properly connected.

Three wines, none available

The dinner was at a Michelin-starred restaurant, the kind of evening where the food is faultless and the wine is supposed to complete it. But the first wine chosen to pair with the meal was out of stock. So was the second. And the third. The list on the table and the cellar in the back had drifted apart, and a perfect meal kept stalling on the same small, avoidable problem.

It was a familiar feeling for anyone who works in or loves restaurants. The technology to recommend a pairing existed somewhere. The technology to track a cellar existed somewhere else. But nothing connected the wine on the list, the dish on the plate, and the bottle actually in stock.

The idea that wouldn't leave

The thought stuck. What if a single layer of intelligence sat between the menu, the cellar and the diner — pairing what's on the list to what's on the plate, and only ever recommending what's genuinely available? Not a generic lookup of "red with meat," but real pairings from a restaurant's real list.

The name arrived, fittingly, in the shower — the moment so many ideas finally make sense. Wine and food, list and cellar, restaurant and guest: all of it entwined.

From idea to live platform

That idea became a platform built by people who actually love wine — and who knew the problem from both sides of the table. Today Entwine is live across founding-club restaurants, with a database of 8,000+ wines built from producer technical sheets, a pairing engine matched to each restaurant's menu, an app that brings a sommelier to every table, and a suite of professional tools for restaurants.

The frustration that started it all is the thing we measure ourselves against: a guest should never again be told the wine they chose has been out of stock for a month. One ecosystem, one satisfying outcome — at every table where wine is taken seriously.

Your own sommelier, at every table.
